Rodalena Recipes: Sour Cream Chicken Enchiladas

How To Please a Crowd:

Step 1: Take your shoes off. Turn on some good music. Find a young kid, and dance.

This takes time (let the boobs swim in a gently boiling water for about an hour or so), so while you’re doing that, relax and read something that makes you happy, and makes you think. Pleasing a crowd requires that you take care of yourself. It’s okay to take a little time alone, to feed your spirit so you can give to those you love.

Step 3: Place the chicken in a large bowl, and let it rest. As it’s resting, grab a ginormous Vidalia onion, a good knife, and your cutting board. Turn up the music. Sing, cry, and dice that onion in a small dice. Taking care of people sometimes requires tearful efforts that no one ever sees.

Step 4: Get two forks and shred the chicken. This is Tedious and Takes Forever. But, do it with these humble tools yourself. Don’t cheat by using that cool tip you found on Pinterest. It’s gonna taste better this way, I promise.

Step 5: Add the diced onions, three cans of cream of chicken soup, one large carton (24 oz.) of sour cream, and if you’re feeling zesty and your particular crowd likes them, a can or two of diced green chilies, and/or a few diced jalapenos, salt and pepper to  taste, a dash of Tony’s and maybe a bit of cayenne pepper. Mix well. Pleasing people is about filling them with good things, being adaptable, and humble. This recipe is actually an old one anyone can find on the back of a can of Campbell’s Cream of Chicken Soup, and while I’ve tweaked it a bit, it’s a simple recipe.

Step 6: Take *fresh* flour tortillas (you’ll need forty all together) and fill them one at a time with about a tablespoon of filling and a nice pinch of your favorite Mexican blend of finely shredded cheeses. Roll and place in a disposable 9×13 pan as shown. Twenty enchiladas will fit in one pan. You have enough filling for two pans full. (Make sure your music is still playing. This is a good time to enlist the help of any bored teenagers on the premises. Let them change the station, but not until Alison and Robert are done singing.)

Step 7: To the remaining filling, add one more can of cream of chicken soup and one (16 oz.) carton sour cream. Mix well, and divide between the two pans. Spread the filling over enchiladas and them top with a ridiculous amount of the shredded cheese. (I use at least 4 cups of shredded cheese when I make this recipe.)

Step 8: Bake at 350 for a half an hour, or until the cheese is good and gooey.

Step 9: Serve. And, smile, and enjoy them with people you treasure.
